  • 200g plain nonfat Greek yogurt
  • 4oz oat milk
  • ½ tsp vanilla extract
  • 30g vanilla whey protein powder
  • Salt to taste
  • 8g pecans, chopped

Sticky Date Caramel Overnight Oats

One of my favorite holiday desserts is sticky toffee pudding, which is really more of a cake than a pudding. I wanted to create a fun holiday breakfast recipe that had a hint of this flavor profile while being lower in sugar, and offering high protein and fiber.

Dates are great for making a sweet caramel-like sauce and they are high minerals like potassium, calcium and magnesium.

    To make date caramel, combine pitted dates, a pinch of salt and 4.5oz hot water. Leave to soak 10 minutes to soften dates. Blend on low-medium speed until you get a nice creamy consistency and refrigerate.

    Combine oats, chia seeds, Greek yogurt, oat milk, vanilla extract, protein powder and a pinch of salt. Divide the mixture evenly into two jars and refrigerate overnight.

    To serve, remove the oats from the fridge, top with 33g date caramel (more if you want, there will be plenty leftover) and 4g chopped pecans. You can use the extra date caramel to make another batch, to spread on toast or have on yogurt!
